Fresh peas and carrots, citrus fruit and wild herbs
Rillettes of sardines, vegetable pickles with Melfor, toasted bread
Braised ham mousse, mixed vegetables with smoked bacon, quail egg with mayonnaise
Main course
Fresh spaghetti, organic ratatouille with basil, Grana Padano emulsion
Cod fillet salted with smoked salt and poached in milk, crushed gratin dauphinois, wild garlic coulis
Blanquette of veal, spring vegetables, basmati rice pilaf style
